Disciplined processing, packaging and shipping systems
Our stringent controls ensure all specifications are adhered to in accordance with HACCP and government regulations throughout all stages of pork processing.
Hygiene code
All staff adhere to a strict hygiene code before entering and while at the meat processing plant. Hygiene standards are monitored throughout the daily processing, using rapid test procedures and audits of standard operating procedures (SOPs), designed specifically to address HACCP in the work environment. AQIS (Australian Quarantine Inspection Service) monitors all meat processing throughout the facility to ensure that all regulations are met.
Modern slaughter process
The slaughtering process is modern, highly efficient and most importantly, hygienic. Swickers has a state-of-the-art European slaughter line using CO2 stunning, processing 300 pigs per hour.
Carcasses are placed under active refrigeration within 30 minutes and maintained at a temperature of 4ºC or less, ready for processing by skilled boners.
Processing and chilling controls
Our processing plant has one of the most modern boning and packaging facilities in Australia. Our rapid chilling process extends the shelf life of the pork meat by storing the product at an air temperature between 0ºC and 2ºC.
Transport
The processed pork meat or carcasses are loaded from a sealed refrigerated area at the processing facility into refrigerated containers or trucks for transport to the designated customer. Through our cold chain management we aim to provide you, the customer, with the freshest product possible and maximum shelf life available.
